Promised to return to the museum for the Quest For Immortality tour and we did!  This time with a few other friends since we all have student cards and therefore get to enjoy the student privileges!

Sultan Shoal
I spent alot of my childhood on that little island, away from the bustling city.  As it is a private-out-of-bounds-to-public place, I cherish my memories and experiences at this island a lot more.


I visited Sultan Shoal a week ago.  Things have really changed alot there!  Jurong Island is somehow getting closer to the lighthouse and there are more huge ships and vessels anchored close to the lighthouse   :(((((
It used to be peaceful and tranquil on the island.  At night, there was nothing more than a sky of stars and faraway lights of ships.  Pitch black sea surrounding the island gave it a mysterious and calm feeling.  Sadly, that is all just a thing of the past now.


I did not take many photos this time round as there is nothing spectacular and fascinating about the place anymore.

Bladed at ECP today.  Fell and grazed my bum.
Note to self: Do not wear mega-short shorts when you think you will fall while blading.

Cycled after blading today.  Crazy shit, I'm beat.






Received my 3 pairs of Air Optix!   :D  Cant wait to try them out tomorrow.







Sultan Shoal from 21st to 24th.  Gonna love it.






Bintan 4th to 7th Jan.  Gonna enjoy the last few days of my school holidays!

- 270g uncooked rice
- Water to cook rice
- 5 garlic cloves
- 200g broccoli, neatly chopped 
- 200g chicken fillet, cubed
- 15g butter
- a few tablespoons Campbell soup
- Shredded Mozzarella Cheese
- Shredded Cheddar Cheese
- Salt & Pepper
- Parsley (garnishing)

Serves 4-5


Directions

1. Wash and rinse rice until water runs clear.
2. In a heated saucepan, melt the butter. Add the broccoli and chicken pieces, saute for a few minutes until the surface of the chicken pieces is white.
3. Add the washed rice, salt and black pepper to taste. Stir well.
4. Wait for the rice mixture to cool, then transfer to a rice cooker. Add the garlic cloves. Add water to cook rice (slightly more than 1 1/2 cups of water - adjust the water amount according to your cooker).
5. When the rice is cooked, portion out the rice into individual oven-safe baking dishes (or use a 20cm x 20 cm square alumnium tray) until about half the height of the dish.
6. Smear the Cambell soup on top of the rice, and topped with a layer of shredded mozzarella and cheddar cheese. (as much as you want)
7. Bake in a pre-heated oven at 200C for about 20-25 minutes, or until all the cheese has melted and is very slightly browned. Garnish with parsley.

280g all-purpose flour
90g sugar
3 tsp baking powder
1/2 tsp salt
1 egg
240g milk
55g butter
80g honey
3 handfuls of oats
2 handfuls of raisins





1) Combine flour, sugar, baking powder and salt in a large bowl.  In another bowl, combine egg, milk, butter and honey.
2) Stir the wet ingredients into the dry ingredients until moistened and quite even.
3) Preheat at 205C.
4) Fill greased or paper-lined muffin cups 3/4 full.
5) Bake at 205C for 18 minutes, until a toothpick inserted near the center comes out clean.  Brush some honey on the top of the muffins and pop them back into the oven for another 1-2 mins.
6) Remove and cooooooool.
